Ingredients:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 cups broccoli florets
  • 1 medium carrot, thinly sliced
  • 2 cups vegetable broth
  • 8 ounces penne pasta
  • 1/2 cup frozen peas
  • 1/2 cup freshly grated Parmesan cheese


Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until tender. Remove the garlic from the skillet and set it aside.

  2. Add the broccoli florets and sliced carrots to the skillet and cook for about 2 minutes, just until heated through.

  3. In a separate pot, bring the vegetable broth to a boil. Stir in the penne pasta and the previously heated minced garlic. Cook for approximately 5 minutes or until the pasta is almost al dente. Remove and discard the garlic.

  4. Transfer the partially cooked pasta and broth to the skillet with the vegetables. Add the frozen peas. Cover the skillet and continue cooking for about 10 minutes over medium heat, or until the pasta is al dente and the vegetables are tender.

  5. Before serving, toss the pasta and vegetables with the freshly grated Parmesan cheese.
