Ingredients


- 1 to 1.5 pounds of round steak, trimmed and cut into serving-sized pieces

- Salt and pepper to taste

- 1/2 cup all-purpose flour

- 2 tablespoons vegetable oil or butter

- 1 onion, thinly sliced

- 2 cloves garlic, minced (optional)

- 2 cups beef broth or beef stock

- 1 teaspoon Worcestershire sauce

- Fresh herbs (such as thyme or rosemary), chopped (optional)

1. Begin by seasoning your round steak pieces with salt and pepper on both sides.

2. Dredge the steak pieces in flour, shaking off any excess.

3. In a large skillet or frying pan, heat the vegetable oil or butter over medium-high heat.

4. Add the floured steak pieces to the skillet and cook for a few minutes on each side until they are browned. You may need to do this in batches to avoid overcrowding the pan. Once browned, remove the steak pieces from the skillet and set them aside.

5. In the same skillet, add the sliced onions and minced garlic (if using). Cook until the onions are softened and translucent.

6. Sprinkle a little flour over the onions and garlic and combine to create a roux.

7. Gradually pour in the beef broth or stock, stirring constantly to avoid lumps. Continue to cook and stir until the gravy thickens and becomes smooth.

8. Add the Worcestershire sauce and any fresh herbs you're using. Adjust the seasoning with salt and pepper to taste.

9. Return the browned round steak pieces to the skillet, ensuring they are coated with the gravy.

10. Reduce the heat to low, cover the skillet, and let the steak simmer in the gravy for about 1 to 1.5 hours, or until the meat is tender. You can also transfer the mixture to an oven-safe dish and bake at a low temperature (around 300°F or 150°C) for the same time.

11. Check the seasoning and adjust as needed before serving.
